How do I cook/bake a duck?
Ok folks, I need your help! My husband bought a duck (dead of course) and I have no idea how to cook it. I assume I can bake it, but at what temperature and for how long? It's approximately 4 1/2 pounds.
Prick the skin all over with a fork .. this will allow the fat to run out and make a crisp skin ... season it with salt and pepper .. Put it on a rack in a roasting pan ... Roast at 350 degrees until golden all over. In a sauce pan .. combine 2 cups of orange juice .. 1 tablespoon of shredded ginger .. 1/2 cup of pomegranate juice or the seeds from a pomegranate .. salt and pepper to taste. .. reduce this mixture by half on medium heat. Baste the duck with this mixture every 15 minutes.
Or .. you can butterfly the duck, pour the sauce on it and just let it bake until crisp and brown (about 1 1/2 hours).
